Then, in 1971, the famous Marques de Riscal made a great discovery - that if you treated this grape with kid gloves and didn't let any air get to it it oxidises very easily from the moment you pick it to the time it's bottled, it produces some of the world's and certainly Spain's finest, crisp, Sancerre-like wines.
Marques de Riscal also introduced Sauvignon Blanc to the area and discovered that this variety was also very well-suited to the Atlantic-cooled climate.
Dominius Serradal is made from a high proportion of prized Verdejo, with a little Sauvignon for extra zip and zing and a splash of Viura..
For centuries, it's been growing the Verdejo grape, which up until recently, was best reserved for sherry-style whites.
The estate can also boast some of the most mature vineyards in Rueda, a handful up to 90 years old.
This is a deliciously crisp, thirst-quenching example from a family cellar dating back to 1697.
It was originally established by Dominican friars who dug out a labyrinth of caves underground.
